"There are some concerns related to what we call 'ghetto sous vide' cooking at home – like the possible but unlikely leaching of chemicals out of plastic bags – we never had a problem with it when we did it at the restaurant, and in the course of testing it for this book, no one had any adverse reactions to it. If you are going to be lazy, sloppy, unhygienic, or careless, it's not worth trying. If you're the kind of person who wears a football helmet every time you take a city bus, or you litigate recreationally, or you're with child, ghetto sous vide is not for you."
